Day 63 of 125.

Today was a mellow almost day off from training.

I woke up super lazy and decided to stay in bed for a little bit and start my day later than usual. I was able to get out of bed by 9 ish as the day was a little bit gloomy. I naturally debated on what should I do for training and decided to take it back to the beach and go run in the sand to change the terrains a little.

As soon as I got to the beach the gloom was so dense that I didn't think it would go away. Walked all the way close to the water, dropped my bag, water and clothes (yep... I run in my bikini. Let's be honest that we do not have all the time in the world to do all we want, so when I run I can do both: workout and work on my tan... done and done! Multitasking is the key folks.LOL!). Was hoping to run 5 miles, but my legs were really sore from yesterday, the sun started to come out full force and the sand got real hot.. real fast, so I ended up doing 3.3 miles and it felt great to jump in the cold water to cool of the muscles and wash the sweat away.

I brought a book and somethings to write while chilling all by myself... it felt so darn good!!!!

 

Went to hangout with family after for a little while and was in the mood for a burger, but a normal burger... more like a burger patty topped with cheese and guacamole.

Burger Patty : 2 patties 

- 1 lb grass feed ground beef

- 1/2 cup diced (small) or shredded onions

- 1 tbsp worchestire sauce

- 1 tsp salt

- 1 tsp black pepper

- 1 tsp paprika

- 1/2 tsp red pepper flakes

- 1/4 tsp cayenne pepper

- 1/4 tsp ground mustard seed

- cheese (sharp cheddar used in this recipe)

Directions: Mix all the ingredients in a bowl and let it sit aside while you make the rest for around 15 minutes. Heat up a large skillet in medium high and add the burgers when the pan is super hot. Cook each side for around 5 minutes or more (depends how you like it)

Guacamole 

- 1 medium ripe avocado

- 1/8 cup diced (small) onions

- 1/8 cup diced (small) tomatoes

- 2 tbsp olive oil

- 1/2 tbsp salt

- 1/4 tsp cayenne pepper

- 1/4 tsp back pepper

- 1/2 lime juice

- handful cilantro (chopped)

Directions: Mix all the ingredients in a bowl using a fork so you can smash the avocado while mixing it.

Snow Peas

- 2-3 handful of fresh snow peas

- 2 tbsp butter

- 1/2 cup diced onions

Directions: heat a medium sauce pan in medium heat, melt the butter, cook the onions for 3 minutes, add the snow peas and cook them for 12-15 min.

Plating: snow peas, burger patty with melted cheese and guacamole on top.

Voila!

 

End of the day was mellow working on my writing and planing the new week.
