Day 15 of 125.

Happy Monday y'all!!!!!

Another week... and this week will be fantastic. I don't know about you, but whenever I have something amazing planned ahead, gives me so much more motivation to carry on the day... it's amazing.

The day started in the right direction... I went to the gym and did some weight training (added some abs and different legs exercises) and my 140 squats for the squat challenge, good morning!

Breakfast was scrabbled eggs with zucchini, white mushrooms, swiss cheese, hot sauce and avocado. Black coffee to give me some energy boost!

Morning at work was great. Everyone seemed to be in good mood and no sick visits... which always makes me better when we don't have a lot of sick visits in the office and everyone is doing well.

Lunch was a happy time for me, as I was eating the delicious salad from last night's dinner and writing down the meal plan for this weekend camping trip. It is one of the things I adore to do is to plan the food for the trips. Hear what your group like and dislike and play with it, make things to bring along... LOVE IT!

Afternoon was a smooth road in the office too. Good way to start the week.

After an intense training over the weekend and a great morning workout, I wanted to go home after work, start packing (so I don't need to do last minute), cook some dinner, work on this blog, read a little and sleep early to have a great morning tomorrow.

For tonight's dinner I did a vegetarian dish as I try for the most time to do Meatless Monday's. Today I cooked on my cast iron skillet: butter, onions, garlic, celery, brussels sprouts, mini sweet red pepper and zucchini. Added some hummus, kimchi and hot sauce, and dinner was ready. Yummmm!

 

I am about to call it quits tonight. I don't even think I will be able to read a page of my book tonight. Guess we will see.

You think I will be able to swim tomorrow? I sure hope so. Fingers crossed!
