Radish Cream

Serves: 4 bowls

3 tbsp butter

1 small onion, chopped

12 oz radishes, peeled and diced

1/4 cauliflower, broken into forests

1 garlic clove, peeled and chopped

1 cup of brodo of choice

1 cup of non-dairy milk (we used oat milk)

1/4 tsp fresh grated nutmeg

4 dry basil leaves

Salt & pepper to taste


1. Heat a medium saucepan in medium heat, melt the butter and saute the onions and garlic for 1-2 minutes until fragrant.

2. Add all the remaining ingredients into the pot and simmer for 20 minutes.

3. Blend all together and enjoy it!

This soup can also be eaten chilled or room temp.
