Ingredients:
3 tbsp olive oil
1 med onions, small diced
3 garlic cloves, diced or minced
1 big carrot, small diced
2 celery stalks, small diced
1 med golden potato, peeled and small diced
1 roman tomatoes, small diced
2 cups of chard, diced
1 can white beans
1 tbsp oregano
2 tbsp nutritional yeast
1/4 tsp turmeric
salt & pepper to taste
2 cups veggie stock
Directions:
- Heat up a large pan in medium heat, and heat up the olive oil. Add the onions and garlic, and sauté for 2-3 minutes, until fragrant.
- Add the carrots and celery, and cook for another 3 -4 minutes. Add the potatoes, and stir for a few seconds.
- Add the tomatoes, the beans, the stock, the seasoning, and adjust the salt and pepper to taste.
- Simmer for 30 minutes, and add the diced chard at the last few minutes of cooking.
