Ginger Butternut Squash Cream

1 butternut squash, roughly chopped

1 small onion, roughly chopped

2 garlic cloves, chopped

2 tbsp olive oil

1 inch of fresh ginger, grated

1 dry bay leaf

2 cups of water

Salt & pepper to taste



  1. Heat up a medium sauce pan in med heat. Add the olive oil and sauté the onions and garlic until translucent (2-3 min), add the butternut squash, and ginger and cook for about 5 min.
  2. Add the water, the bay leaf, adjust salt and pepper to taste.
  3. Bring to a boil and simmer for about 30 min.
  4. Turn off the and blend until smooth, and adjust seasoning to taste.
  5. Enjoy!
