Creme de Aipim

1 lb of  frozen aipim, thawed (yucca)

2 tbsp olive oil

1/2 med onion, diced

2 garlic cloves, diced

3 cups of water

Salt & pepper to taste

1/2 cup bacon bites


  1. Heat up a medium pan in medium heat. Add the olive oil and sauté the onions and garlic, for about 2-3 min, until fragrant.
  2. Add the aipim and the water, adjust the salt and pepper to taste. Simmer for 30 minutes. Peel off the aipim strings/fibers.
  3. Blend the soup, be careful when blending as the cream is extra thick, and could burn the blender motor. Blend until smooth.
  4. Plate with the bacon bites on top.
  5. Enjoy.
