1 lb of frozen aipim, thawed (yucca)
2 tbsp olive oil
1/2 med onion, diced
2 garlic cloves, diced
3 cups of water
Salt & pepper to taste
1/2 cup bacon bites
- Heat up a medium pan in medium heat. Add the olive oil and sauté the onions and garlic, for about 2-3 min, until fragrant.
- Add the aipim and the water, adjust the salt and pepper to taste. Simmer for 30 minutes. Peel off the aipim strings/fibers.
- Blend the soup, be careful when blending as the cream is extra thick, and could burn the blender motor. Blend until smooth.
- Plate with the bacon bites on top.
