Never a bad time for some Chocolate Chip Cookies.
As I am trying to bake more often and was in a mood for a sweat treat, I reached out to a friend to get her recipe and did my little changes to adapt to my dietary choices (gluten free and keto).
This recipe is a chewy type of cookie and full of flavors.
Directions: Start with the coconut oil (make sure to not be melted) add the xylitol and mix. Add the eggs and mix. Add the vanilla and mix. Add the salt, arrowroot powder and mix lightly. Add the flour and mix. Add the chocolate chunks and mix. Let the dough rest in the refrigerator for at least 30 min.
Make little balls with your hands and add them to a baking sheet lined with parchment paper...
Bake at 375 F for 10-12 min.
