Ingredients:
2 tbsp olive oil
1 large cauliflower, roughly chopped
2 medium leeks, roughly chopped
1 medium onion, diced
Salt & pepper to taste
1/4 tsp nutmeg
Water or brodo (yesterday's recipe)
Directions:
1. Heat up the olive oil in a medium saucepan on medium heat. Sautee the onions and leeks for about 2-3 minutes, or until fragrant.
2. Add the chopped cauliflower and sautee for 1-2 minutes.
3. Pour enough water to cover the mix, and let it cook for about 30 minutes, or until the cauliflower is tender.
4. Blend everything together, bring back to the stove for another 2-3 min and adjust the seasoning to taste, and add the nutmeg right before serving.
5. Enjoy!
NOTE: this recipe could be all vegan if you opt to use a vegetable broth or water.
