Carrot Soup

 

Serves: 4 bowls

Prep Time: 10 min

Total Time: 30 min

Ingredients:

1 lb (6-8 carrots) carrots, diced

Half large onion, chopped

3 tbsp butter

3 garlic cloves diced

2 inch ginger, grated

1 tsp salt (more to taste)

1 pinch red pepper flakes

1/8 tsp turmeric

1/8 tsp cumin

1/8 tsp paprika

3 cups of beef brodo or stock, or any broth/stock you have

Directions:

1. Add all the ingredients into a large pan, bring to a boil.

2. Bring the mix down to a simmer, and cook for 15 min, or until all is tender.

3. Blend the soup and serve it as you prefer, cold or warm, we had it both ways and we can't pick the one we like the best.
