3 red beets
3 garlic cloves, minced
1 medium onion, chopped
1 tbsp fresh grated ginger
1 thin carrot, diced
1 small bag of fingerling potatoes
4 cups of brodo, or any stock/broth you have
Salt and pepper to taste
For garnish, you can use some sour cream, yogurt, creme cheese, or even creme fraiche
1. Put all the ingredients into your pressure cooker, and cook for 25 minutes.
2. If you don't have a pressure cooker, you can cook in a regular stove, but you will have to simmer for at least 45 min, or until the beet is cooked through.
3. Scoop the beet out of the mix and peel the skin, cut into chunks and blend with the rest until smooth.
4. We enjoyed more at room temperature, but you can eat it hot or chilled... your call!
